Ingredients:
– 1 cup organic white cowpeas (soaked overnight)
– 2 cups ash gourd (peeled and cut into small cubes)
– 1 cup coconut milk (thick)
– 1 cup coconut milk (thin)
– 2-3 green chilies (slit)
– 1 sprig curry leaves
– 2 tbsp coconut oil
– Salt to taste
– Water as needed
Instructions:
1. Cook the Cowpeas
- Drain the soaked cowpeas and rinse them.
- In a pressure cooker, add the cowpeas and enough water to cover them.
- Cook for about 3-4 whistles or until the cowpeas are tender but not mushy. Set aside.
2. Cook the Ash Gourd
- In a large pot, add the ash gourd cubes and slit green chilies.
- Pour in the thin coconut milk and enough water to cover the ash gourd.
- Season with salt.
- Cook on medium heat until the ash gourd is tender.
3. Combine Ingredients
- Once the ash gourd is cooked, add the cooked cowpeas to the pot.
- Stir well to combine and cook for a few more minutes.
4. Add Thick Coconut Milk
- Reduce the heat to low.
- Add the thick coconut milk and mix gently.

5. Finish with Coconut Oil
