Here’s a delicious recipe for Black Rice Payasam, a creamy and indulgent South Indian dessert:
Ingredients:
– 1 cup organic black rice
– 4 cups milk (you can use dairy or plant-based milk)
– 1/2 cup jaggery or brown sugar (adjust according to taste)
– 4-5 green cardamom pods, crushed
– 1/4 cup chopped mixed nuts (cashews, almonds, pistachios)
– 2 tablespoons ghee (clarified butter)
– A pinch of saffron threads (optional)
– A few strands of edible rose petals for garnish (optional)
Instructions:
1. Rinse the black rice under cold running water and drain well. Soak the rice in water for at least 4 hours or overnight. Drain before cooking.
2. In a large pot, bring the soaked black rice and 2 cups of water to a boil. Reduce the heat to low, cover, and simmer for about 30-40 minutes, or until the rice is cooked and tender. Drain any excess water and set the cooked rice aside.
3. In a separate pot, heat the milk over medium heat until it comes to a gentle boil. Reduce the heat to low and let the milk simmer, stirring occasionally, until it reduces slightly and thickens. This may take about 20-25 minutes.
