Ingredients:

– 1/2 cup bamboo rice

– 1 liter milk (you can use dairy or plant-based milk)

– 1/2 cup jaggery (adjust according to taste)

– 1/4 cup water

– 1/4 cup chopped nuts (cashews, almonds, pistachios)

– 1/4 cup raisins

– 4-5 cardamom pods, crushed

– 1 tablespoon ghee (clarified butter)

– A pinch of saffron threads (optional)

– A few strands of edible rose petals for garnish (optional)

Instructions:

1. Rinse the bamboo rice under cold running water and drain well. Set it aside.

2. In a large pot, bring the milk to a boil over medium heat. Once it boils, reduce the heat to low and let the milk simmer, stirring occasionally to prevent it from sticking to the bottom of the pot.

3. In a separate small saucepan, heat the water and jaggery over medium heat. Stir continuously until the jaggery dissolves completely to form a syrup. Once dissolved, remove it from the heat and set it aside.

4. In another small pan, heat the ghee over medium heat. Add the chopped nuts and raisins to the pan and sauté until the nuts turn golden brown and the raisins plump up. Remove from heat and set aside.

5. Once the milk has reduced slightly and thickened (after about 20-25 minutes of simmering), add the rinsed bamboo rice to the pot. Stir well to combine.

6. Continue to simmer the payasam over low heat, stirring occasionally, until the bamboo rice is cooked and soft. This may take another 20-25 minutes.

7. Once the bamboo rice is cooked and the payasam has thickened to your desired consistency, add the jaggery syrup to the pot. Stir well to incorporate the syrup into the payasam.

8. Add the crushed cardamom pods and saffron threads (if using) to the payasam. Stir well to infuse the flavors.

9. Finally, add the sautéed nuts and raisins to the payasam and stir gently to distribute them evenly.

10. Remove the pot from the heat and let the payasam cool slightly before serving.

11. Garnish the Bamboo Rice Payasam with edible rose petals (if using) before serving.
